How to Make Okoge (Crispy Bottom Rice) in a US Rice Cooker

Make okoge, the crispy rice bottom, in a US rice cooker. Analog, Micom, and IH methods when your machine has no Scorch button.

Okoge (おこげ) is the crispy, toasted rice that used to form on the bottom of a Japanese pot cooked over fire. In the United States, most rice cookers try to stop that from happening. The machine clicks to Warm, the bottom stays pale, and dinner looks even. That is a design win for everyday rice. It is a problem if you actually want the crust.

This guide is for people using a US-sold cooker with no Scorch, Okoge, or Crispy Rice button. Japanese Wikipedia pages and generic “how to cook rice” articles will tell you what okoge is. Brand manuals will tell you how to avoid it. Almost none of them walk through analog, Micom, and induction methods on the machines Americans actually own.

You do not need a Japan-only model. You do need to work with how your cooker heats, then stop before gold turns to charcoal.

What Okoge Is (And What It Is Not)

Okoge is a thin sheet of rice that has dried and browned against the pot. The starch on the grain surface caramelizes. Amino acids and sugars go through the same Maillard browning that toasts bread. Done right, the crust is amber or light brown, snaps when you break it, and tastes like roasted rice rather than smoke.

The same idea shows up under other names. Korean cooking calls the snack nurungji. Chinese kitchens have guoba. Persian rice has tahdig. Spanish paella has socarrat. The heat path is different in each dish, but the goal is the same: a toasted bottom, not a ruined pot.

Electric rice cookers were invented to prevent that bottom layer. The first successful automatic cooker, Toshiba’s 1955 ER-4, used a thermal switch so the pot would stop boiling the moment the water was gone. That history is why a modern US rice cooker is so good at pale, even rice and so reluctant to give you okoge on purpose.

Why Your US Cooker Has No Scorch Button

Japanese household cookers spent decades marketing “no burnt bottom” as the point of the appliance. US importers kept that brief. A Zojirushi or Tiger sold at an American retailer is tuned for fluffy white rice, sushi rice, and a keep-warm that does not yellow the pot in an hour.

Japan-domestic manuals sometimes list an おこげ (okoge) control or a “scorch amount” slider. That control is easy to find in Japanese search results and almost absent on the US SKU sitting on your counter. If your panel has White, Brown, Porridge, Quick, and Soft/Hard, you are in the no-button group this article covers.

Korean brands take a different view. Some Cuckoo and Cuchen models sold in the US include a scorched-rice or Nu Rung Ji program. That is the exception, not the rule, and it is why Japanese and Korean cookers feel so different once you leave the White Rice button.

Until you have a labeled mode, you make okoge by changing three things: the grain, the water, and the dry heat after the cook cycle ends.

How Analog, Micom, and IH Heat the Bottom

The method follows the hardware. If you are unsure which type you own, start with types of rice cookers and the Micom vs induction comparison.

Analog (conventional, one-button). A heating plate sits under the pot. A thermal switch watches the temperature at the bottom. As long as liquid water is there, the plate cannot climb far past 212°F (100°C). When the water is absorbed, the temperature spikes and the cooker clicks to Warm. That spike is the same physics described in how a rice cooker knows the rice is done. Analog machines already concentrate heat where okoge wants to form. Keep-warm on a cheap cooker is also less gentle, which is useful here and annoying for leftover rice.

Micom (microcomputer, usually fuzzy logic). A chip and sensors stretch the soak, control the boil, and steam the pot at the end. The whole point of fuzzy logic is to stop the bottom from overcooking when your water measure is a little off. A Micom cooker will fight you if you use the default White cycle and fluff immediately. You still can get a crust. You just have to finish with a dry hold the program did not plan.

Induction heating (IH). Coils make the inner pot itself the heater, so heat comes from the sides as well as the base. That is why IH rice is so even, and why IH vs fuzzy vs pressure cookers are sold as an upgrade. Even heat is the opposite of a hot-spot crust. IH okoge takes the longest keep-warm or a second, short burst of heat after the rice is already cooked.

Pressure IH cookers (many Cuckoo and Cuchen units) add another wrinkle. Pressure keeps moisture in the pot, which delays drying. If the cooker has a scorched-rice mode, use that after a normal cook. If it does not, treat it like a stubborn IH machine: less water, then a long, watched keep-warm.

Choose Rice That Can Form a Sheet

Okoge needs grains that stick to each other enough to become one layer. That is a starch question more than a brand question.

Short-grain and medium-grain Japanese-style rice is the right starting point. Calrose and Koshihikari both work. Calrose is cheaper and easy to find in US stores. Koshihikari tastes sweeter and forms a slightly more delicate crust. Sushi rice labeled as such is usually in this family.

Long-grain vs short-grain matters here. Jasmine can brown, but the crust is thinner and breaks into shards. Basmati is bred to stay separate. You can toast the bottom of basmati if you try hard enough, and you will mostly get scattered crunchy grains, not a sheet you can lift.

Brown rice is a weak choice for a first attempt. The bran layer slows drying and burns in patches before the starch under it sets. If you want toasted brown rice, use a cooker with a dedicated scorched-rice mode, or accept a patchy result.

Use fresh rice if you can. Old, dried-out bags absorb water unevenly, which is a common cause of undercooked centers next to a dark ring at the edge.

Rinse, Water, and Oil

Wash the rice. Loose milling starch makes gummy rice and a gluey, uneven crust. The Japanese washing method is enough: a fast first drain, then three or four washes until the water is only slightly cloudy. You do not need glass-clear water. The starch science behind rinsing is the same as for everyday rice.

Do not skip the wash in the hope that extra surface starch will “glue” the crust. Too much loose starch sinks, scorches in spots, and tastes pasty.

For water, start from your usual rice-to-water ratio, then remove a little. For short-grain white rice in a rice cooker, many pots use about 1:1 by the cooker’s 180 ml cup. For okoge, try 1 cup rice to about 0.9 cup water, or drop the water by 2 tablespoons per cooker-cup. The top of the pot should still cook through. The bottom should run out of free water a bit earlier so it can dry.

If the top is crunchy and the bottom is only pale, you cut too much water. Add a tablespoon back next time. If the bottom is wet and the crust never forms, cut another tablespoon.

A thin film of oil is optional. A teaspoon of neutral oil or toasted sesame oil, swirled across the empty pot before the rice goes in, helps the sheet release and adds aroma. More than that makes a greasy slab. Do not pour soy sauce, mirin, or sugar into the cooking water if you want a clean okoge. Those ingredients lower the scorch point and burn before the crust turns gold. Season after you lift the sheet.

Measure with the cup that came with the cooker if you still have it. A US 240 ml cup and a rice-cooker cup are not the same size, which is one of the common rice cooker mistakes that throws every ratio off.

Analog Method (One-Button and Thermal-Switch Cookers)

This is the friendliest path, and it is why a cheap cooker can beat a $300 Micom at this one job.

Cookers in this group include machines like the Panasonic SR-G06FGL, the Aroma 6-cup, and the BLACK+DECKER RC506. They heat hard, then click to Warm when the water is gone. Owner notes on the Aroma often mention a crunchy bottom as a normal outcome, not a defect.

  1. Rinse short-grain or Calrose rice. Drain well so you are not adding hidden water.
  2. Add the rice and the reduced water. Optional: oil the pot first.
  3. Close the lid. Press Cook. Do not lift the lid.
  4. When the cooker clicks to Warm, leave the lid closed. Do not fluff.
  5. Hold on Warm for 15 to 30 minutes. On a basic cooker, keep-warm already dries and toasts the bottom faster than a fuzzy-logic machine does.
  6. Open the lid. Smell first. Nutty and toasty is right. Acrid smoke means you waited too long.
  7. Scoop the soft rice from the top into a bowl. Work around the crust.
  8. Run a silicone paddle around the edge of the pot, then lift the sheet. It should come up in a few large pieces.

If 20 minutes on Warm leaves the bottom blond, give it another 10 minutes and check again. Analog keep-warm can go from gold to black in a hurry after the 30-minute mark, especially in a thin pot. Stay in the kitchen for this part.

Some analog levers can be pressed back to Cook after the first click. A short second Cook burst (1 to 3 minutes) will darken the crust fast. Pull the plug or flip back to Warm the moment you smell toast. Do not walk away for a full second cycle on a nearly dry pot.

Glass-lid analog cookers make this easier because you can see steam slow down. Solid-lid models need the clock and your nose.

Micom Method (Fuzzy Logic, No Scorch Button)

A Micom cooker such as the Zojirushi NS-ZCC10, the Zojirushi NS-TPC, or the Tiger JBV-A10U is trying to give you an even pot. The TPC is a US-market Micom with no Scorch key and a keep-warm stack built to keep the bottom pale. The soak and steam phases keep the bottom wet longer. That is why people buy them. It is also why a default White cycle plus an immediate fluff produces no okoge at all.

Use the cooker’s texture control if it has one. Harder, Firm, or a similar setting shortens the wet finish. Regular White is acceptable if you plan a long keep-warm. Skip Porridge, GABA, and Mixed. Those programs hold moisture on purpose.

  1. Rinse and drain. Use the reduced water ratio.
  2. Optional oil film.
  3. Choose White (or Harder/Firm). Start the cycle. Leave the lid shut.
  4. When the cycle ends, do not open the lid and do not stir. The steam step is still finishing the top layer.
  5. Stay on Keep Warm for 25 to 45 minutes. Micom keep-warm is gentler than analog Warm, so the crust takes longer.
  6. Check at 25 minutes. If the bottom is still soft and pale, close the lid and give it 10 more minutes.
  7. Lift the soft rice, then the crust, with a silicone paddle.

If keep-warm never dries the bottom, the cooker is still pulsing enough moisture through the pot. Two workarounds are common:

  • Start a Quick or a short White cycle after the first batch is already cooked, then cancel after a few minutes when you smell toast. You are using the heater as a dry skillet, not recooking a full pot of water.
  • On models with Reheat, run Reheat once after the rice has sat on Warm. Reheat is meant to bring leftover rice back up, and it often adds a burst of bottom heat.

Do not add a splash of water “to be safe” before the crusting hold. That splash is how you get mushy rice on top and no crust below.

Tiger’s Tacook (synchro-cooking) plate is for steaming food above the rice. Leave it out for okoge. Extra steam in the headspace works against a dry bottom.

IH Method (Induction, Still No Scorch Button)

Induction cookers such as the Zojirushi NP-HCC10 heat the whole pot. The bottom still gets hot, but it does not run away from the sides the way a cheap plate cooker does. Plan on a longer finish and smaller water cuts so the top does not go crunchy while you wait.

Some IH manuals, including listings discussed for the Zojirushi NW-QAC10, mention steam-reduce or scorch-related options. Those labels are not consistent across US product pages. Open the paper manual for your exact model number. If you see Scorch, Okoge, or a crust setting, use the manufacturer’s steps and skip the improvisation below. If you do not, treat the cooker as IH with no button.

  1. Use short-grain rice and a modest water cut (start with 1 to 2 tablespoons less per cooker-cup, not a drastic 20 percent cut).
  2. Cook on regular White, or Harder if the menu has it. Avoid GABA and Umami for this. Those cycles are long and wet.
  3. When the cooker beeps, leave the lid closed on Keep Warm for 35 to 50 minutes.
  4. Check once at 35 minutes. IH keep-warm is designed not to scorch, so you may need the full window.
  5. If the bottom is still blond after 50 minutes, run Reheat or a canceled Quick cycle for a few minutes and stay next to the machine.

IH inner pots are often heavier and more expensive to replace. Read inner pot materials before you decide to “just let it go longer.” Gold is the stop point. Black means you are in repair-and-clean territory.

Pressure IH without a nurungji mode is the hardest case. Vent or open-cook features (where the model has them) help moisture leave. After the pressure cycle, a watched keep-warm is still the main tool.

If Your Cooker Does Have a Scorched-Rice Mode

A few US-sold Korean cookers include the button this article assumes you lack. The Cuchen CRT-RPD0610IEWUS review describes Nu Rung Ji as a follow-on mode after a normal White cook. That page does not collect owner-reported minute counts for the crust, so treat any timer as a starting point from the cooker’s own menu, then stay nearby and stop at gold.

If your Cuckoo or Cuchen menu lists Nurungji, Scorched, or Crispy Rice, use that program after a normal White cook. Do not also slash the water as hard as you would on a no-button analog cooker. The mode already supplies the dry heat. Over-reducing water plus a dedicated scorch cycle is how people get black pots.

Serve that crust the Korean way if you want: sesame oil and salt as a snack, or broken into hot broth for scorched-rice soup. The Japanese okoge habit is similar, just usually eaten with tea or as part of the rice bowl.

How to Lift, Serve, and Eat It

Do not stir the pot “to mix in the crispy bits” unless you want those bits everywhere and a scratched coating. Remove the soft rice first. Then slide the paddle under the crust from the edge toward the center.

A good sheet is flexible while hot and crisp as it cools. Break it into shards at the table. Classic toppings are a few drops of toasted sesame oil and a pinch of salt. Green tea or hot water poured over leftover okoge is okoge-chazuke: the crust softens at the edges and stays crunchy in the middle.

You can also float pieces in a light broth, the way nurungji is used. Do not refrigerate a wet, tea-soaked leftover for later. If you have extra dry shards, cool them, then store them airtight for a day or two and re-crisp in a dry skillet.

Leftover soft rice from the same pot is still ordinary cooked rice. Cool it quickly and store it using the same rice food-safety rules you already follow.

Troubleshooting

The bottom is pale and soft. You did not dry it long enough, or you used too much water. On analog, add 10 minutes of Warm. On Micom or IH, add 10 to 15 minutes, or use a short canceled Cook/Quick burst. Next batch, remove another tablespoon of water.

The top is undercooked and the bottom is dark. Too little water, or you opened the lid during the cook. The steam escaped, the plate overheated, and the top never finished. Use a smaller water cut and keep the lid shut until the crusting hold.

The crust is black and bitter. That is a burn, not okoge. Scoop the good rice without scraping. Soak and clean the pot with the non-abrasive method. Next time, check earlier. Analog keep-warm past 30 or 40 minutes is the usual culprit.

The crust formed only in a ring at the edge. The pot may be sitting slightly off the heating plate, or there is debris on the plate. Unplug the cooker, lift the pot, and wipe the plate. A dirty plate creates hot spots, which is also covered in the deep cleaning guide.

The sheet will not release. Let the pot sit off heat for two minutes so the crust firms. Then work the paddle slowly around the rim. If it still smears, the bottom is not dry enough. Close the lid and Warm it a little longer. Never switch to a knife or a fork.

Only a few grains stuck, no sheet. You used long-grain rice, or you fluffed before the hold. Switch to Calrose or sushi rice and leave the pot unstirred until you lift the crust.

The cooker smelled like plastic or the coating looks dull. Stop. You held dry heat too long on a nonstick pot. Let it cool, wash with a soft sponge, and inspect the coating. If metal is showing, it is replacement-pot time, not another okoge experiment.

Cleaning After a Successful Crust

A gold crust that released cleanly usually leaves a pot you can wash like any other batch: warm water, dish soap, soft sponge. If a few grains remain, soak. Do not attack the coating because you are proud of the crunch.

If you used sesame oil, wash soon so the oil does not sit in the warm pot. Oil plus heat is how leftover smells move into the next batch of plain rice.

Wipe the lid, gasket, and steam vent if starchy foam climbed during the wet phase. A clogged vent changes how moisture leaves the pot, which changes the crust the next time you try this.

Food Safety While You Wait for Crunch

Do not make okoge by turning the cooker off and leaving the pot on the counter “to dry.” That drops the rice through the USDA danger zone, where Bacillus cereus can grow. The crust needs heat, not room-temperature sitting.
