Sushi rice is the foundation of every great sushi roll. Get it wrong, and no amount of fresh fish or creative fillings will save your meal. Get it right, and even a simple cucumber roll tastes restaurant-quality.

The good news: your rice cooker can do most of the work. Here’s our tested method that produces consistent results every time.

Choosing the Right Rice

This is the single most important decision. You need short-grain Japanese rice — also sold as “sushi rice” or “Calrose rice.” The most popular brands:

Do NOT use: Jasmine rice, basmati rice, long-grain rice, or “converted” rice. These varieties have different starch compositions and will not produce the sticky, firm texture sushi requires.

Step-by-Step Instructions

Step 1: Measure and Rinse the Rice

Place 2 cups of sushi rice in a fine-mesh strainer. Rinse under cold running water while gently agitating the grains. The water will start cloudy — keep rinsing until it runs mostly clear, usually 3-5 rinses.

Why rinse? Rinsing removes surface starch that would make the cooked rice gummy instead of properly sticky. There’s a difference: sushi rice should hold together when shaped, not clump into a paste.

After rinsing, let the rice soak in the cooking water for 20–30 minutes before starting the cooker. This allows the grains to absorb water evenly, resulting in a more uniform texture throughout.

If your fuzzy logic cooker has a soak phase built into its sushi program (most Zojirushi and Tiger models do), you can skip this step — the cooker handles it automatically.

Step 3: Cook in Your Rice Cooker

Add the rinsed rice and water to your rice cooker’s inner pot. If you have a piece of kombu (dried kelp), lay it on top of the rice — it adds a subtle umami depth that elevates the flavor.

  • Dedicated sushi setting: Use it. It adjusts water absorption for firmer grains.
  • No sushi setting: Use the white rice setting with 10% less water than the pot markings indicate. For 2 cooker cups, use just under the “2” line.

Press start and do not open the lid during cooking. The steam cycle is critical for sushi rice texture.

Step 4: Prepare the Seasoning (Sushi Zu)

While the rice cooks (~40 minutes), prepare the vinegar seasoning:

  1. Combine in a small saucepan: 3 tbsp rice vinegar + 2 tbsp sugar + 1 tsp salt
  2. Heat gently over low heat, stirring until sugar and salt dissolve completely
  3. Do not boil — boiling evaporates the vinegar’s acidity
  4. Remove from heat and let cool to room temperature

Pro tip: Use seasoned rice vinegar only as a shortcut. It already contains sugar and salt, so skip those if you go this route. The taste is slightly different from traditional sushi zu, but acceptable for home cooking.

Step 5: Season and Cool the Rice

This is where technique matters most:

  1. Transfer the hot rice to a large, flat container — traditionally a wooden hangiri bowl, but a large glass baking dish works fine
  2. Remove the kombu if you used it
  3. Drizzle the seasoning over the rice in a zigzag pattern
  4. Using a rice paddle or spatula, fold (don’t stir) the rice using cutting motions — slicing through the rice and gently turning it
  5. While folding, fan the rice (or have a helper fan it) to cool it quickly. This is what creates the signature glossy sheen

Folding vs. stirring: Stirring mashes the grains. Folding preserves their structure while coating each grain evenly with seasoning.

Step 6: Cover and Rest

Cover the seasoned rice with a damp kitchen towel (not plastic wrap — rice needs to breathe). Use within 2 hours at room temperature.

Never refrigerate sushi rice. Cold temperatures cause the starch to retrograde, making the rice hard and crumbly — the opposite of what you want for sushi.
